In a large bowl,sift the flour then make a well and add the eggs ,then little by little,add the milk while stirring with the whip.Mix well until creamy and no more lumps.Remember,don’t mix the flour and the eggs before adding the milk.
Add the vanilla sugar,salt ,melted butter and rum.mix well and then cover with cloth or plastic wrap and let it rest for 1 hour before cooking.
Heat a lightly oiled (or wipe it with butter )griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
